SPOTLIGHT: The Pasty Republic

My first question when ordering from The Pasty Republic was “how many should I order?”

The very kind man, who I later learned is the proud owner, countered with asking if I would be sharing with anyone. I told him no and he suggested I stick with one as they were larger than most guests expect.

Before stepping up to the truck, I had imagined a handheld meal to be the size of an empanada, but wow was I wrong in the best of ways! Check out the size of that flaky, delicious pasty!

The Farmer

I’m sure you’re wondering what the heck a pasty is — I mean, I definitely was. The Pasty Republic has a fun story page on their site attributing it’s history to Great Britain.

After you’ve read up on their history, let’s talk filling options. The Pasty Republic boasts a pretty dense menu. From ‘The Regulars’ like The Shepard which is a classic take on a shepard’s pie to The Foreman filled with a garden of veggies. I opted for The Farmer which held equal parts protein, veggie and cheese.

At Civic Center EATS, they also offer a few of their specials on rotation. Look over their menu to see which ones are checked-off meaning they’re available! I really want to try one of their dessert pasties next.

My life is food. I work in the restaurant industry, I food blog, and I LOVE cooking at home. I work hard to find a balance when in comes to indulgence and nutrition. I could not get over how incredibly tasty my pasty was, but also how good I felt eating it. There was so much broccoli and chicken with just enough of a crust to satisfy my carb craving. Bonus points for not walking away with a food coma!

If you can’t wait until Thursday to get your pasty lunch on at Civic Center EATS, then fear not, they deliver! Now that’s a win-win!

This Summer, I’m partnering with Civic Center EATS to highlight Denver’s incredible food trucks! This is a paid partnership, however all views expressed are my own.

Civic Center EATS is Denver’s Favorite annual lunch tradition! Enjoy delicious food, gorgeous views, live music, beer & wine garden all for a great cause!
