This Summer, I’m partnering with Civic Center EATS to highlight Denver’s incredible food trucks! This is a paid partnership, however all views expressed are my own.

Civic Center EATS is Denver’s Favorite annual lunch tradition! Enjoy delicious food, gorgeous views, live music, beer & wine garden all for a great cause! Civic Center EATS 2019 takes place in Civic Center Park from 11 am to 2 pm on Tuesdays, Wednesdays and Thursdays from April 30th through October 10th (excluding July 2nd, 3rd & 4th; August 7th, 28th & 29th; September 3rd & 12th).*  Civic Center EATS is produced by the nonprofit Civic Center Conservancy, who welcomes back Westword as presenting sponsor.


I first encountered Adobo at Top Taco 2018; they were on my list of contenders to judge. I can safely say it was the first time in my life that I believed in love at first site…or bite. Their brisket taco blew. Me. Away. Clearly, others felt similarly as they were the winner for People’s Choice that year.

To add to their success story, Adobo was recently voted Denver’s Best Food Truck of 2019 by Westword! How did this food truck get their start and reach so much success? I had a chance to talk with Chef Blaine Baggao to hear how they went from A to Z in such a short time.

Adobo features New Mexican/Filipino fusion cuisine with items such as their Green Chile Cheese Rice and Grandma’s Filipino Chicken Adobo Rice Bowl. Both items that are simple but packed with flavor.

Chef Blaine is a former New Mexico resident whose family hails from the Philippines. He was working your typical burnout corporate job before finally deciding to head out into the culinary world and work for himself. A story I feel a lot of us can relate to. Denver is becoming known for its entrepreneurial spirit.

Something fun Chef Blaine mentioned was his attempt at bringing in the food truck community of Denver together. He’s been working on developing networking opportunities for food truck owners looking for collective resources much like Denver Eats acts as an association for restaurants.
