Lamb Board – Rethink Lamb with Brunch

2018 is feeling like the year of the lamb. I won’t call it a comeback, instead, it’s more like welcoming a new star to the stage.

Recently, the American Lamb Board brought together a few local all-star chefs to showcase their take on breakfast based lamb dishes. Let’s be honest, lamb isn’t something you correlate with the word breakfast. A lot of us at home aren’t sure how to even handle the meat (*raises hand*), but I’m totally rethinking lamb after this incredible brunch and seeing all the various ways it can be used.

The morning started with Nate of Blackbelly walking us through a breakdown of the animal. Did you know Blackbelly has their own butcher program? And they don’t let a thing go to waste!

Next up, the gang moved to the dining room where each chef had a chance to talk about their dish before guests dove into each plate.

I can’t even begin to describe how crazy good each dish was. That duck egg on lamb hash? I licked the plate. I really do hope that more restaurants continue being creative with their menu and incorporate lamb into the mix. Through the brunch, I met a ton of local purveyors that love working with restaurants in the Denver area.

Point of the story: next time you see lamb on a menu, give it a try and ask if it's local!
